Restuffed Baked Potato                                

Ingredients:                                                                                                          serves 4

4 med to large Russet baking potatoes     scrubbed     dried   holes poked to allow steam to escape

1/4 c   old cheddar cheese     shredded

3 tbsp   butter or margarine

3 tbsp   sour cream

1 tbsp   chives   chopped to 1/4" ( 1/2 cm ) or smaller

1 tbsp   roasted red pepper     minced fine     place on a paper towel to absorb excess liquid  

1 tbsp   roasted garlic     smoothed

Salt and pepper to taste

pre-heat the oven to 400º F

bake the potatoes 45 min to 1 hour depending on size   check after 40 min

let cool slightly then cut lengthwise as near the centre as possible

with a soup spoon carefully scoop out the potato from all 8 of the skins

place the chunks of potato in a large bowl

add all the other ingredients except the red pepper

stir the ingredients together until well mixed   do not mash   you want texture

add the roasted red pepper and give it one final mix

spoon the mixture into 4 of the potato skins   mound it higher than the skin

place on a baking sheet or pie plate in a warm oven until ready to serve

( if you like, place the potatoes under a broiler for a couple of minutes to brown before serving )
