RJ’s Salmon Salad yield 4 good sized sandwiches
1 can red salmon drained ( or leftover salmon from a previous meal )
1/4 c red onion chopped fine
1/4 c celery chopped fine
1/4 c red pepper chopped fine
1/4 c carrot grated chopped
1 tsp green relish
1/4 tsp horseradish
1/4 c mayonnaise
1 tbsp Ranch dressing
1/8 tsp salt
1/4 tsp black pepper
In a large bowl break up the salmon roughly with a fork.
Add the vegetables and the salt and pepper and stir thoroughly
Add the horseradish, relish, dressing and mayo. Stir until sell mixed. Use as much mayonnaise as you like to get the desired creaminess
Serve this on a bed of lettuce with some tomato slices or use it as a sandwich filling. I like mine toasted lightly with some cucumber slices and a thin slice of Gouda on it.
Change it up a bit. Use tuna and finely chop some green olives with pimiento instead of the relish.
