Tartar Sauce
Ingredients: serves 4
1 c mayonnaise or salad dressing
1 tbsp sweet green relish or chopped gherkin pickles
1½ tsp chives chopped to 1/4” ( 1/2 cm )
1½ tsp capers chopped fine
1 tsp lemon juice
1/4 tsp white pepper fine
in a large bowl mix all the ingredients together until well blended
transfer to a smaller stainless steel or glass bowl and refrigerate at least 2 hours, preferably longer – even the day ahead
stores well in a sealed container, refrigerated, 2-3 weeks

add more capers or more chives if you want to
change it up a bit by using dill relish or finely minced dill pickles and add some fresh dill

use a stainless steel or glass bowl because it will chill faster in the refrigerator than in plastic don’t use aluminum it’s okay to store the leftovers in plastic
