Pork Chop Parmesan
Ingredients: serves 4
4 pork chops bone – in fat trimmed pat dry with a paper towel
3-4 mushrooms sliced thin
1 c pizza sauce commercial or home made spicy or not
1/4 c parmesan cheese shaved ( use a vegetable peeler to shave curls off a wedge of Parmesan )
2 tbsp fresh oregano leaves or 1 tbsp dried
2 tbsp olive oil

pre heat the oven to 350º F rack in the middle position
foil and spray a sheet pan and a rack preheat a frypan add the oil
salt and pepper the chops and sear both sides until golden and slightly crusted remove to the rack
apply 1 tbsp of pizza sauce to each chop
distribute the mushroom slices on each chop
apply another tbsp of sauce to each
add curls of parmesan to each
top each with a sprinkle of oregano leaves
put the assembled dish in the oven for 30 – 40 min depending on the thickness of the chops
remove and let stand, tented with foil, for 5 min before serving
we serve with Italian seasoned ( oregano, basil, granulated onion and garlic) roasted potatoes and a vegetable.
