Roasted Lemon-Thyme Chicken
Ingredients: serves 4
4 chicken breasts bone in skin on
2 lemons
4 tbsp olive oil
2 tbsp thyme leaves fresh ( or 1 scant tbsp dried )
Salt and pepper to taste
preheat the oven to 350º F rack in centre position spray a baking sheet and rack
zest both lemons cut one in half for squeezing ( save the other half for another time )
heat the oil in a fry pan medium heat salt and pepper the chicken – both sides
lightly brown both sides of the chicken breasts 2-3 min each side
place the chicken on the sprayed pan with the rack skin side up
evenly distribute the thyme leaves and the lemon zest over the four breasts
give each a light squeeze of lemon juice don’t wash off the thyme and lemon zest
roast at 350º F for 40-45 min ( depending on size ) uncovered
let stand, tented with foil, 3-4 min to rest before serving
we serve this with mini roast potatoes and fresh green beans
( Note: As I write this recipe it seems appropriate to mention the spray. Various commercial, non-stick sprays are available but for home use I have a pump-spray bottle which I fill with light olive oil. It works fine.)
